Caesar salad is one of the most famous dishes of the North American cuisine. The original Caesar salad recipe calls for white bread croutons, romaine lettuce and grated Parmesan cheese. But a Caesar salad without its special sauce is like soup without water. [/column][/row]

This sauce is the main ingredient of the salad. The base of the sauce consists of fresh eggs, which are boiled in water for one minute and then cooled off. The eggs are then whipped together with olive oil, flavored with garlic, lime juice and Worcester sauce.

In its original form, Caesar salad is a light dish, which is why it is often supplemented with more calorie-dense ingredients like hard-boiled eggs and fried chicken. The Caesar salad comes from the American cuisine. It got its name from an Italian chef who owned several restaurants in America. The Caesar salad was created especially for the occasion of the Independence Day when there was almost nothing left in the kitchen and customers demanded food. That might be the reason why Caesar salad consists of so few ingredients. However, in Paris, despite its simple composition, Caesar salad was deemed the best American recipe of the last 50 years.

Thus, as you have probably realized by now, the “headliner” of the recipe is the sauce. It is because of the sauce that the Caesar salad has become a favorite for many food lovers. It is this sauce that infused the relatively simple ingredients, namely – romaine lettuce, croutons and grated Parmesan cheese with a remarkable, unforgettable taste. Each housewife who makes this salad has her own improvisational tricks for making the sauce: some use boiled egg yolks, others like to add mustard. But in the original recipe, created by the aforementioned Italian-American chef, Caesar salad or, more precisely, its sauce is made like mayonnaise. The latter calls for an egg yolk (boiled in water for 1 minute), olive oil, garlic, lime juice and Worcester sauce.

  • 1 egg yolk (boiled in water for 1 minute);
  • 3 tablespoons pour of freshly squeezed lime juice;
  • 1 tablespoon of crushed or grated garlic (for the sauce);
  • 1 tablespoon of crushed or grated garlic (for the croutons);
  • 1/2 teaspoon of Worcester sauce;
  • 1/4 teaspoon of chili power;
  • 1 small cup of olive oil (for making the croutons);
  •  1/3cup of highest-quality virgin olive oil (for the sauce);
  • Salt and also freshly ground black pepper carefully add to taste;
  • 1 large head of romaine lettuce;
  • Approx. 150-200 g of freshly grated Parmesan cheese for sprinkling on the salad;
  • 2 cups of custom made croutons;
  • A mix of dry Italian herbs (basil, thyme, rosemary, oregano) (for the croutons);
  • Salt and also freshly ground black pepper carefully add to taste (for the croutons);


The process of making a Caesar salad begins with preparing the sauce. First, boil an egg in water for 1 minute. Then separate the yolk and put it in a mixing bowl. The sauce can be prepared in a mixer or whipped with a whisk. The salad will be just as good, but the process of preparing the sauce will take less time. We make the sauce using a whisk (just like in the original recipe, as there were no electronic mixers in 1924 when the Caesar salad was created). So, the egg yolk goes to the bowl.

The garlic is either crushed or grated separately. Mix 1 tablespoon of garlic with the olive oil. Then transfer the oil and garlic mixture into the bowl with the egg yolk. Mix everything thoroughly. As you’re mixing, add the lime juice, pepper (both the chili and the freshly ground black one), Worcester sauce and salt to taste.

At this point, the salad is halfway done (or at least the sauce, which makes up the basis of the salad). Now, let’s begin forming the salad itself. To accomplish that, follow these steps:

As is specified in the ingredients list, Caesar salad also consists of croutons. They are not just regular croutons; therefore you will have to make them yourself.

Pre-heat the oven to 180-200 °C. As it is heating, cut the white bread into cubes. Crush or grate the garlic. Once grated, mix it together with the olive oil. Flavor the resulting garlicky oil with salt, black pepper and herbs.

Then mix the white bread cubes with the mixture, place on a baking sheet and put it in the oven. To get evenly toasted croutons, turn them over several times as they’re baking.

The croutons are baked in the oven until golden brown. You can see the appropriate color in the picture. The croutons are ready.

Now you have to prepare the romaine lettuce. First, wash it leave by leave and place on a paper towel to dry the water off. Any remaining water certainly won’t make the salad any tastier. Dry the lettuce thoroughly. Once dry, shred it up into 3-5 cm sized pieces.

Now grate the Parmesan cheese into fine shavings.

Mix the lettuce with the croutons in the bowl, add the prepared sauce and sprinkle with grated Parmesan cheese. The original Caesar salad is ready.

Caesar salad, made according to the classical recipe, is a low-calorie vegetarian dish, so if you wish to have not just a tasty, but also a filling meal, you can supplement it with something else.

For that purpose you can use lightly salted salmon, fried chicken breasts or hard-boiled chicken and quail eggs. It all depends on your imagination. Now the Caesar salad is really ready. Bon Appétit!
